For example, if I wanted to cook some beef ribs how can I calculate an accurate finished cooking weight?

I just weigh the bones before discarding them and subtract that weight from the weight of the meat. Meat loses weight as it cooks, but the bones don't really, so it's as accurate as it needs to be.0
