Does anyone have healthy recipes for an ice cream maker?

This doesn't require an ice cream maker. If you make your own custard you could replace sugar with splenda. However, sugar prevents the mixture from freezing too solid so if you go sugar free outside of the banana, it might freeze a bit hard. Remedy this by blitzing in the food processor with an egg white and freezing again.1
