Should I weigh my meat before or after cooking ? And once my meat is cooked should I weigh it and use those calories when cooked to log it ?

I find entries for raw meat and log the raw weight.
Meat loses moisture as it cooks, and the better cooked it is, the less it weighs. So a 250g at raw weight steak done rare will weigh more than the same steak cooked well done, but all it's lost is moisture (which doesn't have calories) so the calories for the rare and well done steaks are roughly the same despite the different weights.0
