We are REALLY struggling to find things that we can eat now that we have begun doing keto again. Seems like we are always doing the same things! Does anyone have any grear/creative snack ideas or recipes, as well as, dinner recipes they are willing to share?

Here’s a recipe for our favorite keto meal, enchilada casserole, we substitute sour cream for the cottage cheese and don’t add green chilis if we don’t have any. It’s pretty easy to mix and match with what you have available. I like the Cajun or Buffalo deli chicken slices for extra flavor. I imagine this can be made into keto lasagna if we changed the ingredients a bit. Let me know how you like it.
