Weight Loss Not Working - advice

Hello,
Over the past 18 months I have gone from around 68kg up to 84.3kg at my peak whilst suffering from low moods and over-eating. This has been unintentional weight gain.
A few years ago I had a similar situation although my weight reached about 76kg before I lost all the weight again.
However this time, approaching 29, I seem to be struggling. I have limited my calories to around 1750 per day and I am exercising twice a week which burns around 500 calories per session. I am wearing a Fitbit for tracking etc.
in the first three weeks I was able to drop to around 81.8 however I don’t seem to be losing the weight for example over the past 10 days, despite restricting my calories to the 1750 target and exercising, I haven’t lost any more weight and in fact yesterday had increased my weight to 82.5
I found this demoralising as my mental health is already quite fragile hence why I’ve put on weight in the past
Is this just normal fluxtionations or am I doing something wrong possibly the timing of eating? I am eating healthy, usually fish, veg and carbs. I do snack but these are things like olives, fruit and always accounted for
