Paleo/Celiac Diseas

I apologize ahead of time if this type of question has already been addressed, I have celiac disease and I have found that the Paleo Diet seems be work for someone like me. Does anyone have "simple" meal ideas they would like to share? From what I see this is a very reasonable diet for me but eggs are not on the list of OK foods and I eat a lot of egg whites so any suggestions are welcome.

    Eggs are allowed on a paleo diet....Where did you read they aren't ok? It is encouraged that you eat the whole egg though.

    I saw that online somewhere, it could have been one of those people who don't eat dairy? It's confusing some say just eat the yolks Either way I can't get that crazy I will stick with my egg whites. Paleo doesn't allow cheese or yogurt either?? I consider that whole food too. I think I'm just going to stick with what I think is whole foods and make my life a easier. Eating clean/gluten free is really my goal anyway not necessarily a diet that is restrictive.

    Primal does allow dairy if you feel like you can't give it up. There is a Paleo/Primal forum here that is helpful.

    I have celiac disease, but don't intentionally eat paleo. I did have to cut way down my cheese consumption though, because I was eating a ton of it everyday. I would just grab it as a snack because with celiac snacks are sometimes a little hard to find for me. I had to switch to veggies for a quick snack.

    I generally try to stick to whole foods/low carb. That works best for me. I do allow myself some gluten free bread almost every day, but limit it to 2 slices. I also allow myself some starches once or twice a week (I love potatoes in all forms). It really hasn't hurt my weight loss at all.

    I have been gluten free for over a year and went grain free recently because I am trying to pin down what other intolerances I might have. I do find paleo recipes to be very helpful but that doesn't mean I have gone completely paleo. I still eat a little dairy, not a lot because it doesn't agree with me a whole lot either. Eggs are something that are eaten in copious amounts and since I raise chickens and ducks for that purpose I eat a lot of eggs! Especially if you're using coconut flour at all, you're going to use plenty of eggs.

    Thanks I will check that out I can't take dairy out of my diet I think that would be to hard for me.

    I hate having celiac, I can't eat even a little gluten or I'm in pain for an entire day.
