Cashew Chili yumyum!
I have to share this one. I make this recipe often, its great alone or ontop of some steamed rice! It keeps nicely also, as i usualy make it over a weekend and eat it all throughout the following week.
1 green pepper, chopped
1 red pepper
1 medium onion, chopped
2 stalks celery, chopped (optional)
1 can kidney beans
2 can Black beans [dont need to use canned]
1 can corn
1 can whole tomatoes [the big can]
2-3 teaspoon chili powder
3 drops tabasco sauce
1 teaspoon cumin
2 cloves garlic, minced
1 teaspoon basil
1 teaspoon oregano
1/2 teaspoon pepper
1 cup raisins
1 cup cashews
throw everything together in a big pot and let simmer, add the cashews and raisins last. ENJOY!
