I'm finding it easy to stay low calorie when you can literally barely eat anything while tracking these 4 things. I need variety for meals. Any ideas? Help! Lol

High fiber and low carb are goals that are in tension, given that fiber is a carb. That's not saying you can't do it, depending on how you define "high" for fiber and "low" for carbs. Look for foods where most of the carbs are fiber, or at least a high percentage. Combine them with lean animal proteins. Use whole foods, or no-salt added frozen or canned foods. Don't add salt. Don't add fat.1

Low carb, low fat is almost unheard of.... that would leave you with only protein to derive calories from.... which generally isn't a great idea. Out of curiousity... where are you getting this diet from?1

Why do you want or need to eat like this? Who told you so?
I see a few problems here: low fat (all kinds of fat?) is problematic because fats are needed for some vitamins, for essential fatty acids, for your brain to work, and it also helps to move things along in your intestines.
Low carb and high fiber is not possible as fiber is only present in carbs.
Excluding carbs and fats would only leave you with high protein, which could be bad for some people with kidney problems. And the farts and body odour!1 -
That regime will be problematic on so many levels, not to mention unsustainable, which you've already attested too.0

Sure, that sounds easy to stay low calorie! You're limited to lean protein and low carb fruits (like berries) and veggies. Perhaps plus a carb-neutral fiber supplement, depending on your fiber goals.
Like others have said, this is probably unnecessary. If it is medically necessary, your medical team should have provided you with a dietitian and the resources you need.
It reminds me of what the patients on "My 600 Pound Life" eat. If it is medically necessary for you to eat this way (again you should have supervision) you could check this out:
https://www.healthline.com/nutrition/dr-nowzaradan-diet
"...This restrictive diet should only be attempted by people who are preparing for weight loss surgery or who are at imminent risk of serious health concerns due to weight.
In addition, they should only follow the diet under the supervision of a medical team, including a doctor or surgeon and bariatric dietitian..."0
