Back when I worked rotating shifts which included two nights out of every ten days, I logged midnight to midnight, as in if I ate it at 12:01am Tuesday it goes on Tuesday's log, right up until 11:59pm.
I also logged based on when the meal was started, so if I started eating a few minutes before midnight on Tuesday night, all that meal goes on Tuesday's log, even if half the food is eaten on Wednesday.
This meant looking back over the week I'd have some days with a lot more/less calories than other days, but for this reason I preferred monitoring my food for an entire week at a time, not just by the day.0
