What to cook for supper on a hot day

I would like some help...i'm boiling hot right now and the last thing I feel like doing is cooking today (its really hot outside) but obviously supper must be made..

Any suggestions about what to cook for supper on a hot day? I know I could make a green salad as the main supper dish but we did that on sunday (green salad with tuna salad) so I don't want to repeat it.

We don't have a BBQ..otherwise that would work well.

    I love love love chicken salad (made my way).

    2 cups chopped cooked chicken breast
    1/4 cup Hellman's Low Fat Mayo
    1/2 cup quartered grapes (I prefer green)
    1/4 cup diced red onion
    1/2 cup diced celery
    1/8 cup golden raisins
    2 tbsp slivered almonds
    Optional: curry powder if you want curried chicken salad...just mix into the mayo before adding

    This makes 4 huge servings that you can serve in a sandwich or wrap...208 calories per serving and very healthy!!!

    I'm making tilapia on the stove ( tooo hot for the oven!) with some veggies and a salad. Pretty easy, but that chicken salad does sound DELISH!! :happy:

    oo that is a good idea too...how do you cook your fish on the stove (I normally do in the oven).

    You can also stove-top grill (use a grill pan), broil or bake your favorite seafood (I like halibut and salmon) OR boneless, skinless chicken to put on a bed of greens. I beef mine up with lots of other veggies and reduced fat cheese.

    I usually make up a batch of veggie burgers. Lentils, carrots, wheat germ, onions, garlic, spices, and walnuts and keep 'em in the freezer. I just stovetop warm them when it's too hot too cook!

    thinking about adding avocado and canned corn and serve with a bit of sour cream

    Sub sandwiches with some lean meats, tomatoes, letuce, onions, pepers, light mayo, etc. Just be sure and get some healthy bread. :)

    To make ahead for those hot days:

    Gazpacho

    Taco salad...minus the shell. I make 2 lbs of taco meat using ground turkey and then freeze in portions. Just thaw in microwave for 2 minutes.

    Kitchen stays cool. :)

    Sometimes we do a "cold plate"... usually chicken salad or tuna salad made with light mayo, some cottage cheese with fresh tomatoes and cucumbers from the garden, and fresh fruit. Come to think of it, I might just do that tonight.
