@VegjoyP - I love oatmeal raisin cookies. I’ve been trying new recipes! Last batch used some maple and flax thrown in… the problem is eating just 1!

No pics but ---- one of my fav things to make and have around is brigadeiro. It's super easy - it's just a can of sweetened condensed milk, 1/2 a bag of semi-sweet chocolate chips (or you can use milk choc...I think that makes them too sweet...or you can use cocoa powder instead). Cook it until it gets thick (make sure to watch and stir and not to burn it~)....take it off the heat, add ~1tbls of butter and some vanilla (I add cinnamon too). Dump it on a plate and cover it with plastic wrap so it doesn't get too much of a skin. Let it cool in fridge and then roll it into balls (however big you want but I usually use a tablespoon). Roll them in cocoa powder or cinnamon or sprinkles are nice too. Basically chewy, chocolate caramel. I bring them to get togethers all the time.
I also made lemon posset for the first time the other day. Also super easy and not many ingredients. 2 cups of heavy cream and 2/3 cup of sugar --- you bring that to a simmer and let it cook for ~8-10 min (until the sugar is dissolved and the full amount of liquid is 2cups...so slightly reduced). I also added the zest of 4 lemons (my partner thought it was 'too zesty'...but I liked it. You could strain out the zest if you want). Once it's off the heat you add the juice of 2-3 lemons and then pour it into some jars with lids. Let it cool before putting the lids on so it doesn't get wet on top...then put the lids on and put it in the fridge. It basically becomes lemon pudding. I also shook up some homemade blackberry jam with some of the extra heavy cream until it was slightly thickened and poured that on top - but it would be good with fresh fruit on top too. I also meant to add some vanilla after cooking but forgot. It was super good...kinda a bit like key lime pie but lemon.....OOOO you could add crushed up gram crackers on top or dip gram crackers in it or something too....
Both are not a lot of ingredients and easy...take about 15-20 min (the brigadeiro a bit more since you have to wait and then roll them). I love both.0 -

These were my 'dream' when growing up - we had them when we went camping. I'm pretty sure I'd still love them lol
