Hi all,
I'm looking to track my macros to gain insight into my portion sizes and how what I'm eating affects my physical symptoms.
I'm a very healthy weight, I'm not interested in weight-loss, I'm interested in how dietary change affects how I feel.

Hello, and welcome!
It's probably true that most people are using MFP to lose weight, and a few to gain, but there are also folks using it to improve nutrition, using it for eating to support their athletic goals, or using it after weight loss to keep at a steady weight with good nutrition. It seems like it should be able to help you with your goals, too.
