I am going to a potluck brunch next weekend for my Type I Diabetics support group and having a hard time figuring out something unique to bring. Any ideas??

Veggie try with dressing
Shrimp (with garlic butter)
Cauliflower mashed (instead of mashed potato)-just don't have too many cups of it.
Shishcabobs (however it's spelled-just watch what you use to marinade)
Thin sliced ham with cheese stuck together with toothpick
Bacon wrapped cream cheese stuffed pepper (any kind of pepper)0 -
If you don't stall on splenda and can use almond flour, this looks good but I haven't tried it:

Healthy deviled eggs: hard boil eggs as usual, cut in half, save half of yolks and toss the rest, use mashed avocado instead of mayo. Salt and pepper to taste. Easy healthy and delicious.0

Zucchini pizza boats! To make, just slice some zucchinis lengthwise (each makes two boats) and scrape out the soft, seedy inside. Top with pizza sauce, cheese and whatever toppings strike your fancy. Pop them in the oven on a cookie sheet for 25-30 minutes at 350 degrees. This a delicious, low carb side that most everyone will love!0
