I get a new routine every week from my trainer. Many of the exercises don't fit the descriptions here. My Apple Watch assigns calories used during my workout, but FP won't sync with them. I used to be able to enter them by hand, but not since this new downgrade.

You shouldn’t be doing a new routine every week1

Ah yes, this is true...however, if the client actually becomes self-sufficient to any degree, they will no longer have a need for a "trainer." And no doubt the fitness guru explains it away as, "kEePiNg tHe bOdY gUeSsInG" or some such nonsense.
OP - your "trainer" is chasing your wallet, not your success.2 -

Just like so many dieticians try to sound knowledgeable by having their clients forego the basics and concentrate on nonsensical ideas that are sure to be a secretive way of Fatloss or fitness that only they know.

OP, while those guys aren't wrong, you should be able to add exercises manually via the MFP exercise database, or create your own custom exercise descriptions to add there. If you can't there's some bug going on for you, and you should contact MFP support through the "Help" function.
I would think Apple would synch the calories correctly even if it can't handle the descriptions, but Apple didn't implement their side of the interface correctly in some other ways, so who knows - certainly not me, because I don't own any Apple products.
ETA: Before contacting support, you might want to uninstall and reinstall the MFP app on your device. They usually suggest that as a first step, and it will often resolve the problem. Your data should all be in the cloud, so it shouldn't cause any major bumps in the road to do that.2 -
OP are you new to exercise? What are your goals? If you just generally want to get fit then it’s ok to try different stuff. But if you have a goal to build muscle then ideally you need to follow some sort of structured plan.1
