That's a good question ... One I have never been able to answer. ... Well, the not eating too much part is easier to answer than the amount of calories being consistent, but I have some ideas. ...
Both actually might be answered by the same behavior ... planning and strict adherence ... which are so easy to say and so hard to do. ...

On possibly a more helpful tack ... which still includes planning ... is to first decide what kind of foods you are willing to include in your diet, and then finding recipes that include them in various combinations of dishes that you can prep and prepare. Use recipes that have the nutritional data available for them and the number of servings per recipe. This might make it easier for you to put together a days worth of food that comes within your consistent calories goal. ...

As for eating too much, a lot of over eating happens because we are munching on things as we do other things at the same time .. so we end up eating mindlessly. Some people have reported being very successful with pre-planning even their snacks, and portioning them out or purchasing single servings that fit into their calorie plans for the day ... and only eating that stuff that was planned. ... I have to admit, that never worked for me.

Sometimes the eating too much is a habit ... habits are hard to change, but they can be altered by making small changes and sticking to them for a long time.
I've read that to successfully change a habit is to replace it with something else ... like if you tend to take second helpings, switch to a smaller plate. (works for making smaller portion servings also. Some people find that brushing their teeth right after a meal helps them to not snack until the next planned meal. Other people find that saving a bit for later from a meal allows them to have something 'extra' without adding to the extra calories and also helps to not overeat.

    Good luck.
