Breakfast Fried Rice - definately adding this to my rotation

Eggs, bacon, Riced Cauliflower & Shredded Cheese. I made a double batch so I have a meal ready to go tomorrow. Just need to dump in a skillet to warm it up. Tasted great and very filling. I would eat this even if I wasn’t dieting.

Cook crumbled bacon (2 slices) remove some bacon grease if desired.
Stir in 2 eggs and scramble
Stir in about 3/4 cup riced cauliflower (I used frozen and microwaved about 2 minutes, squeezed the water out with paper towels and then added to bacon-egg scramble)
Add a few tbsp of shredded cheese
S&P to taste
