Just made this last night and it was SOOOO good: https://gardeninthekitchen.com/roasted-veggies-with-creamy-polenta/#recipe . It might sound boring but is SO tasty. I always sub homemade veggie broth for water when making polenta - way more flavorful.
For the milk we use Silk Organic Unsweetened Soy Milk or I make homemade oat milk (4 c water + 1/2 c oats in blender, then strained out - my dog loves the leftover oat scraps, go figure!), and for the butter we now only use Miyoko's vegan organic butter (one of the few that tastes exactly like butter). If you want to go straight up non-dairy you can also sub nutritional yeast but we still like a good parmigiano reggiano as the recipe is super duper healthy.0
