Question: Why to the exercise calories you "earn" go down in number as you consume more calories,(toward the end of the day)

I was thinking the same thing.
With a synced device, there is an extrapolation going on to estimate your calorie burn for the entire day. If you exercise earlier on in the day but are less active later in the day, the estimate is revised?0 -
Are you using an Apple Watch? And do you have diary entry that looks like this?
MFP does an Apple Watch adjustment. Shortest way to explain it is, it “deducts” calories you would have earned anyway by living eating and breathing, with an adjustment for the activity level you selected in goals, so you don’t get double credit.
I don’t know if other trackers are adjusted likewise. The only one I’ve heard mentioned is Apple Watch.0 -

Garmin is similar: since the exercise burn includes BMR, those double counted BMR calories need to be subtracted via the calorie adjustment. It's not always noticeable, but it's very obvious on days when I do long hikes (=many BMR calories included in my exercise burn) with often a significant negative calorie adjustment, but the total adjustment is still positive.

You can turn that feature off so it doesn't add negative calories. It's in the app settings. Good luck.0
