I recently signed up for Premium thinking this would enable me to put all the macronutrient categories in My Food Diary view. Not so. Is there a way to do this? What about micronutrients?

In the phone/tablet to landscape mode should show 5 nutrient columns (plus calories), and you have some control over which columns are shown. In the web version of MFP, the diary shows those columns, plus there's a "full report" button at the bottom of the page that shows 7 columns.
With premium, the Nutrition menu item (or the pie chart at the top of your diary page) will take you to a Nutrition page that has 3 options at the top: Calories, Nutrients and Macros. Nutrients will give you a full list of the nutrients for the day (day view), or for 7 prior days including the day you started with (week view).0
