Are macro percentages supposed to match the grams of the food? Or is there something I am missing?
Apparently Kale has a higher percent of fat than protein, but it has more grams of protein.

The percentage relates to the amount of calories, not the grams. So that's why the fat has a higher percentage than you expect (fat = 9 calories per gram; carbs and protein = 4 calories per gram).1
