Change the weight

Is it possible to change the weight of an item as, I have 50grm of a breakfast cereal but, I can only log it as 100grm so it's not giving me a true reading of my calories etc

It's not possible to change the unit of measurement used on a food item once it is created; if a food item was created by MyFitnessPal, it will typically have a few options for measurements, whereas user created foods might only have one.
In either case, in your example you would just want to add 0.5 servings, since 50g is half of 100g.0

Change the serving size. If you at 50g and 100g is listed then you ate .5 servings of 100g.0
