I've substituted potatoes for sweet potatoes where I can in my diet (which was difficult since potatoes are my comfort food!). Sweet potatoes are just a better nutritional choice and actually have a great flavor. Also, I found that they have a lower inflammatory rating than a regular potato, which is something that I have to watch heavily in my diet or else I'm in a lot of pain.
So just a recommendation, try it with sweet potatoes!! It's delish!
I cut into wedges, spread out on a baking sheet and drizzle olive oil over them. Sprinkle with sea salt and then turn them over to coat them all over. Bake at 425 F for about 30 minutes, turning them every 10 minutes or so.0 -
