Life change

I am now 71 yo male. Up until 3 years ago I played competitive squash for over 40 years at a good level. Then came osteo arthritis in the knees and had to stop. Weight gain was inevitable. Trying hard now and starting to swim.

That sounds like a good plan. Like you, I have OA, but so far it's been manageable: It limits exercise activity, but I can still do the things I enjoy most, rowing and cycling.
Weight management can happen entirely on the eating side of the equation, if necessary. (It worked that way for me, at around age 60: I didn't increase exercise to lose weight, just continued about the same activities I'd been doing for over a decade.) I'm now 67, and maintaining a healthy weight primarily by managing my eating (with a variable weather-dependent and seasonal exercise schedule).
For sure, though, exercise is a help: Burns some calories, improves health/fitness, maybe even improves mood. I hope the swimming works out great for you!
