Scoobys Activity Level

Hi Guys,
Just a quick question because I feel like I'm going no where with my weight loss.
So my goal is to basically lose another (minimum) 5% body fat while also building muscle. I'm currently 60kgs with a estimation of between 20-24% body fat. I am 163cm tall.
My workout routine is pretty intense because I would like to see results before summer (3 months) and because I know I'm at that point where its getting increasingly hard to move that last bit of fat.
Now understandably my diet is not 100% but that's why I'm here to ask this question and start a new slate today, what activity level should I put into the scooby TDEE app to work out what my daily calorie goal should be.
I have a full time desk job, when I'm at home I don't move much at all, ... BUT. I got to the gym A LOT. 6-7 days a week + 2 days Pole Dancing class (and yes I still have one full day of rest!)
My goal is to burn on a weekly basis 3500 calories while at the gym (so this does not include my 2 pole dancing classes - whatever I burn there is a bonus) I use the Polar FT4 to track my calorie progress for the week.
So basically, what should I enter in my activity level?
I was on 1400 for abut a month with no result except literally the last day on 1400 calories I had lost just over half a kg, but by that point I had already changed my settings to 1550 calories and just thought I'd see how I go, so it's been a week and i've put that half a kg back on (It was just fathers & a nephews birthday so I'm not gonna lie but I have eaten pretty bad the past week)
Anyway just thought I'd ask for some opinions.
Sorry for the wall of text and thank you to anyone that does read it
