New and struggling

I’ve tried many apps and they work for a few weeks to motivate me then I keep forgetting and go back to normal. Fasting helps but I’m stuck lost ten lbs and plateaus for months. Hoping this time it sticks for good.

Here's the thing: It sticks for good if you stick to it. Please understand, I've been where you are, so I'm sympathetic.
Maybe this next is harsh, but IMO it's not "keep forgetting", it's more like "make a decision that it's too much trouble". I stayed overweight to obese for literally decades, until the last 7+ years. I have to be clear with myself that that was a decision on my part to stay fat: I wasn't ready to commit or to put in the work. Long term, that had bad health consequences for me that I probably could've avoided if I'd made healthier decisions earlier.
Any of us are going to slip up here and there. That's normal, human, and doesn't "ruin everything". If we get back to trying again, the new routine will stick more and more often, and results will happen - maybe slowly, but that's better than never.
It's key to find the right routine for our unique selves, tailored to our preferences, strengths, challenges, and lifestyle. No one approach works for everyone. That means experimenting, and sometimes experiments fail. That's OK, as long as it's a thing we learn from, and try something different, until we find a routine that's relative easy, practical, affordable, and enjoyable (at least tolerable) that we can keep up long term almost on autopilot. Habits are powerful. We choose our habits.
Maybe MFP will be a great route for you, as it has been for me. I hope so, for your sake. If not, keep working, try something different, and you will succeed.

Be honest with yourself. Are you really forgetting?
I darn well never forgot. I rationalized, and that’s a totally different ballgame. I could win the Rationalizing Olympics.
If it’s really a case of forgetting, you can easily set alarms and reminders on your phone. Plaster the house in post-it notes. Heck, in days of yore (aka analogue) I even use to hang a Kleenex over my steering wheel to remind me to do something the next morning.
Only you can decide “this is the day I’m going to remember”. Aka, focus.
