Cod with tomato and chorizo sauce

I just thought I'd share this recipe with everyone - my gym just sent it through to me as healthy meal of the month! I haven't cooked it yet, but it does sound nice! Includes nutritional value at the bottom

Cod with tomato and chorizo sauce

Ingredients:

• olive oil
• 1 garlic clove, sliced
• 4 thin slices chorizo from the deli counter, cut into matchsticks
• a pinch chilli flakes
• 400g tin chopped tomatoes
• 2 thick cod fillets or other sustainable white fish
• green beans cooked to serve
Method:

1. Heat 1 tbsp olive oil in a pan then cook the garlic and chorizo for a few minutes. Add the chilli and tomatoes and simmer for 10 minutes until thickened,

2. Meanwhile, rub the fish with a little more oil, season and grill or steam for about 4-6 minutes until cooked through. Serve the fish with sauce and green beans.

252 calories; 11.6 g fat; 46g carbohydrates; 31.5 g protein; 2.1g fibre; 0.75g salt
