Mealtime Time

My husband has just finished chemo and has been eating well throughout. He always prefers to eat the last meal of the day really early, like 2:30. This is a bad deal for me because I'm trying not to snack and eat at night. By 8:30, it's been 6 hours since I've eaten. I would prefer to eat about 5:30 or 6:00 but I don't like cooking even one meal, let alone two, and it's nice to sit down with him for a meal. Any suggestions are welcome. Thanks, D

    Or, also, cook something that can be re-heated. Sit down with him for his lunch, to keep company, talk etc, but eating something like fruit or a salad, and then have your proper meal in a moment more ok for you.

    You may not be able to do this for all the meals you cook; some aren't so good as "leftovers." Some are great. If it's just a few hours, they're hardly leftovers.

    Would it be possible to eat SOME of the meal with him and eat the rest later? Yes, it would be the same food twice in one day, but no extra cooking, very little extra dish washing (just the dish you serve into), and spreads out your meal periods.

    Good suggestions above. Also, have a microwave meal. They're super easy to prepare, and generally not too high calorie and with OK macros.
