Homemade Dry Sugar Free Pudding Mix

Has anyone got a recipe, or experimented making, a dry sugar free pudding mix?
We make homemade ice cream with it, and sometimes make mousse with pudding mix and Greek yogurt.
I go through boxes and boxes of the stuff. I usually open the boxes and decant them into mason jars so I can spoon out as much as I need. I despair every time I take a trash bag of little jello boxes out to the curb. It’s just wasteful. I wish it was sold in bulk like PBP.
The Kroger brand is cheap, but seems to have gone through a formula change and it tastes very bitter to both of us now.
Jello brand is about twice the cost. We’re trying some tonight to see if it has the same bitter taste.
But I’d really like to be able to make a dry mix myself, if possible.
Recipes I’m finding online call for powdered milk, instant-gel type corn starches, a pinch of salt, and sugar. I’m planning to try different sweeteners to go as sugar free as possible. (Yes, I know, there’s natural sugars in powdered milk).
Anyone given this a shot or have a reliable recipe? If somebody has Noreen’s call sign, this is right up her alley, but I’m blanking on the rest of her user name.

I would love to have this recipe too!
I love mixing the sugar free pudding mix with Dannon whole milk yogurt (low in carbs), then adding Sola Granola on top (also low carb) and of course a little squirt of whipped topping (can use the low carb one, but the regular one doesn’t have that many carbs and is cheaper). The pistachio and cheesecake mix are my favorite! You can also add fruit!
Not only does this taste amazing it also looks like a fancy dessert 😀
