For sure no trans fats! Try to eliminate as many saturated fats as you can. No bacon. No butter. No shortening. No beef. Very little dairy.

Eat foods high in fiber like beans and brown rice. Dried beans are cheap. Make a big pot. They might have more calories than you realize. Add olive oil to make them even more calorie-laden. Olive oil may lower LDL. Oats also have lots of fiber as well as calories. No butter though. If you like the idea of savory oats, add olive oil, garlic, and other spices. If you want sweeter oats, add fresh fiber-rich fruit like apples or raspberries.

Fatty fish helps lower LDL. It also can be, but isn't always, calorie-packed. Think about a big hunk of salmon. Mmmm.

Almonds and avocados are other good foods that will pack the calories and help lower LDL.

I don't know what your stats are, but since you say you want to GAIN weight, I won't suggest losing. That can help with LDLs. Getting in more physical activity can help. Avoid alcohol.

So the reason to include foods with soluble fiber like oats, might (paraphrasing) help reduce the cholesterols in digestion. The things i remember reading that it helps gather up and sweep it out.... (sorry, don't have a technical explanation, i just now include in regular eating for this reason.)

anyway, do a search for foods with soluble fiber, add/increase those amounts slowly so body adjusts to higher fiber levels.

I'm sorry your doctor failed to give you the information you need to accomplish the goals they want for you. Ask them for a referral to a dietitian. (If you are in the US, avoid "nutritionists" - you want a registered dietitian.
