Low carb spaghetti and meatballs with sauce
It is true! And extremely easy to make the trick is the noodles, the rest are just off the shelf ingredients (sauce, meat, cheese)
Here is how I made the noodles:
1) Crack a full egg into a measuring cup
2) Add egg whites till you reach a full cup (Real eggs or a carton of egg whites both work).
3) Add 2 tablespoons of unflavored gelatin (Beef gelatin works too)
4) Blend it up (immersion blender recommended)
5) Grease a hot pan with your favorite fat (lard, butter, etc)
6) Pour half of the mix in the pan and spread it out, cook for about 2 min
7) Flip it like a crape and cook the other side
8) Put finish egg sheet on a plate and do the same with the rest of the batter
9) Roll egg sheets and cut into noodle shape.
No further prep is needed, these are good to go as pasta noodles.
Next I just made meatballs, put them in the crockpot along with the sauce and let them cook for a few hours.
It made 5 servings
Each serving is 596 cal, 12 carbs, 38 fat, 50 protein, 4 fiber and 5 sugar
You just have to pay attention to the nutrition label on the sauce. You amounts will vary. I could have got a sugar fee sauce but II didn't see one at the store.
Anyway, this was a fabulous meal and the noodles are in my opinion indistinguishable from real spaghetti in terms of taste.

Raos is sugar free. It's more expensive but they don't add all the crap that is in most cheap spaghetti sauces. And if you like a sweeter sauce, add carrots or carrot juice.2
