    Sheet pan dinners. 😍 so easy. I'm so lazy!
    Chicken legs or boneless thighs. Potatoes. Veg--zucchini or delicata squash, green beans, broccoli, all good. If I have some fruit handy, I'll add a little last minute with butter and maybe some nuts.
    Easy to make enough for tomorrow-- maybe add a salad to change it up.

    Stir fry your protein, remove from pan.
    Stir fry vegetables, add your protein and a sauce of your choosing. Heat through. Serve. Eat.

    Cauliflower and chickpeas wraps are my latest discovery !

    Roast cauliflower, chickpeas and red bel pepper in the oven with spices (cumin, nutmeg, garlic) and wrap all up in wheat tortillas with a little tzatziki and spinach.

    I think my favorite is a Hungarian Goulash recipe (from With a Jug of Wine, 1949, by Morrison Wood )I've been making for a very long time.

    PEPPER AND TOMATO STEW (LECSÓ)
    INGREDIENTS

    Turkey sausage or other meat
    2 🥔
    1 medium onion, finely chopped
    ? tablespoons of sweet paprika
    2 sweet peppers, cored, seeded, and chopped
    2 -3 tomatoes, roughly chopped
    Salt to taste

    INSTRUCTIONS

    Add the meat to a pot and cook over low heat until it is browned while boiling some cubed potatoes.
    Add the onions, cook over low heat until they are translucent (not browned), about ten minutes.
    Remove the pot from the heat and stir in the paprika.(*Hungarian paprika)
    Add the peppers, and cook for about 15 minutes (until they soften), adding a bit of water in the beginning, if needed.
    Add the tomatoes and potatoes, and cook uncovered for about an hour or three, until the peppers are soft and the liquid
    reduces a bit.
