Breakfast can be anything you like.
I rotate a few. Steel cut oats with chopped apples. I cook this in a crockpot and freeze individual portions; I swap out some of the water for milk (more protein). Depending on serving size, a Texas muffin tin can work for freezing.
Egg "McMuffins." I bake 9 eggs plus 9 egg whites in a 9" square pan. I cut this into 9 - 3" squares and freeze. Eggs can topped with sauteed veggies before baking. I sometimes add a slice of Canadian bacon. In the a.m. toast a high fiber or whole wheat English muffin (bagel thins are nice) then add a slice of 2% cheese.
No pre-prep, but I also like a Greek yogurt "parfait." I use Greek yogurt, Fiber One (original) sprinkles and berries. Add chopped nuts if desired.

If you like to prep, there are some categories you can search on the web or Pinterest and get lots of recipe ideas that can be made, frozen, zapped in the microwave when needed:
Egg muffins or egg bites
Baked oatmeal
Mini-frittata
Quinoa bites
Breakfast burritos
Not a freezing thing, but overnight oats is another possible category. If you want to prep, mix the dry ingredients ahead, add the liquid the night before.
You might also take a look at breakfast recipes in the MFP blog: https://blog.myfitnesspal.com/recipes/
That said, I agree that there's no need to limit yourself to official breakfast foods. Whatever keeps you full and happy, that you find tasty, is a fine way to break your fast.
Best wishes!0
