Here's an easy one.
Soak two cups of black beans overnight.
Drain and put in a pressure cooker with a chopped carrot or two, some chopped celery, a half (or whole) chopped onion, a coarsely chopped glove of garlic (about ten cloves), a chopped jalapeno, a chopped serrano, a whole bunch of cumin, seven fresh bay leaves from the yard, some salt, and other herbs of your choice. I like Mediterranean oregano and sage. Cover with water. Pressure cook for six minutes and let the pressure decrease naturally.
Let cool a bit. Then remove the bay leaves.
Now you have two choices. Just eat it as it is or take out some of the beans and set aside. You'll have to pick out any other tasty bits and toss back in the pot. Puree with an immersion blender, then add back the beans. Mmmmmm.1 -
