Hello,
My Father-In-Law is turning 75 on the 31st. I normally make him his favorite a German Chocolate Cake. But he recently found out that he's a diabetic and has to take pills to control his sugars. Can someone tell me if this recipe is really Diabetic Friendly? Or if anyone knows of a really good German Chocolate Cake and Frosting recipe for Diabetics that can share with me I'd love to have it!!
Ingredients:
4 oz. unsweetened baking chocolate
□ 1/2 cup boiling water
□ 1/2 cup butter
□ 1/2 cup granulated sugar substitute
□ 3 tablespoons granulated fructose
□ 4 egg yolks
□ 2 teaspoons vanilla extract
□ 2 1/4 cup flour
□ 1 teaspoon baking soda
□ 1/2 teaspoon salt
□ 1 cup buttermilk
□ 4 egg whites, stiffly beaten
FROSTING:

□ 1/3 cup granulated sugar replacement
□ 1 egg
□ 1 tablespoon flour
□ 2 tablespoons butter
□ 2 teaspoons vanilla

Thank you in advance!
hugs,
Jennifer

I don't know exactly what the guidelines are to call something "diabetic friendly," nor do I know where you'd even find granulated fructose, but my Granny was diabetic all my life. In most cakes, you can substitute the sugar for no sugar added applesauce. About half as much applesauce as the recipe calls for sugar (1 cup applesauce = 2 cups sugar).0

I don't know if it is diabetic friendly or not really. I have a type 1 diabetic in my immediate family but he uses insulin and counts carbs. Try running it through the recipe builder and see how many carbs it has would be my suggestion. My dad is type 2 diabetic like your FIL and it seems like he is more careful with the sugar than the carbs. In my limited experience with artificial sweeteners in baking I haven't liked any of them. Good luck and if you find a tasty recipe please share!0

Thank you for suggesting the applesauce instead of sugar, I'll have to remember this.0

Definitely!! I'll post it in this thread as I have a feeling that I'll be doing more diabetic friendly cooking as the holidays get closer.0
