bouillon cube ?

Hi all,

I'm trying to eat a healthy and low cal dinner. I made a vegetable soup with my own soup base, and quickly add some shirataki noodles to it. However, how can i quickly add flavor to the soup without all calories? Right now I have some garlic powder, cayenne pepper, and some fresh herbs, but I'm still missing the flavor. Are bouillon cubes healthy ? I hear they add good flavor , but just want to make sure they're not unhealthy. Cause it'll be perfect for me to get some flavor in quick minus all the calories!

    Oh also, I don't wanna use store bought vegetable stock! I assume bouillon cubes are equally healthy/unhealthy. Also forgot to mention that I'm vegetarian!
  • Their salt content is VERY high. I use them though.

    Easy Peasy...make your own.

    Toss chicken carcass into crockpot with a whole small onion, bay leaf, garlic clove or 2, a handful of baby carrots, 2 stalks of celery and a wee bit of tumeric.

    Cook on low for 6-8 hours, you can tell when it's done cause it smells heavenly. Strain, discard all solids & refrigerate remaining liquid overnight. If it gells, you did it correctly & you can either scoop off the solidified fat for lower calories or use it (I use it) as is.

    To use, toss into pot, add diced onion, celery & frozen veg, whatever you please, bring to boil & adjust seasoning (add salt & pepper to taste) enjoy!

    When I make soup, I make the base out of water, a small can of tomato paste, and Braggs liquid aminos (to taste).

    to make vegetable broth, you do the same but omit the chicken carcass...you want it to be concentrated, so after it's done, boiling it down to make a concentrate will give you the best results, salt after it's been boiled down :drinker:

    I bought Better than bouillon - Vegetable - ingredients looked fairly healthy, I'm gonna add it to my soup today, and will let you all know of the outcome :)

    When you say you're missing flavor I bet what you're really missing is the salt. Most soups are heavily salted so when you make your own it doesn't taste right because we are so used to the salty taste.

    I loved 'better than bouillon' soup bases before I started making my own. It's a great shortcut & I used to be able to have dinner on the table quick-fast using their products! It really IS better than bouillon.

    Yes, it is *very* high in sodium, however, I am not watching my intake as I find it's just not an issue for me or my family. We have bigger fish to fry with diabetes, food allergies etc :blushing:
