I'm an American now living in Italy, and have been living on carbs and pasta for the past 3 years. I just heard of this cool little device that cuts veggies into noodles. I've tried zucchini and pumpkin pasta with tomatoes and basil and it was amazing. I know it's not the same as gnocchi and spaghetti, but it's a sure healthy alternative. I've put a link below for a demo Enjoy if anyone knows of some great recipes with the machine let me know.
