stuffed peppers

Options
3 green peppers
1/2 pound 97% lean ground beef
1 cup low sodium beef broth
8oz can of crushed tomatoes
1 cup uncooked rice
1/2 cup chopped mushrooms
1/2 cup chopped yellow squash
1/2 cup chopped onion
1 garlic clove
1 cup fat free shredded cheddar cheese

sauté beef, mushrooms, onions, garlic, squash until beef is cooked through
add broth, tomatoes, rice, simmer until rice is cooked through
cut peppers in half, remove stem and seeds
place peppers in baking pan with a little water in the bottom of pan,
add 1/2 cup beef mixture to each pepper, cover
bake at 350 for 30-45 mins
top with cheese 1/2 way through bake time.
peppers should still have a crunch to them.
