Coconut Curry Lentils MFP Recipe - Any good?
I happen to have a bag of lentils that I have no clue what to do with because I don't know if I've ever eaten lentils in my life! I got it at the food bank I think. Anyway, I saw a coconut curry lentil recipe on the app and I'm wondering, has anyone tried it?
As someone who has never eaten lentils, I'm a little hesitant and don't want to waste the ingredients. Or the time. I do like Coconut curry. I often eat Massamon Curry when I'm having Thai.

If cooking lentils for the first time I would just boil them with a stock cube and several halved cloves of garlic. It’s important not to overcook as they are nicest when still chewy and al dente. Cooking time can vary due to age of the lentils so start tasting for doneness after 20 minutes. After cooking, strain. pluck out the garlic and dress with olive oil, vinegar and salt to taste. Serve warm or at room temperature.0
