    Sunday-Spinach Lasagna Macaroni

    Spinach Lasagna with Ricotta Recipe

    Saucy sugo al pomodoro, creamy cheesy, earthy spinach, and tasty basil lasagna! A mouthful of savory and delicious goodness. This recipe highlights simple fresh ingredients as traditional Italian recipes commonly do.
    Ingredients
    Units Scale

    12 to 16 dried lasagna pasta (also use no boil if desired)

    (*** I use macaroni instead)

    3 to 4 cups sugo al pomodoro
    2 tablespoons extra virgin olive oil
    3 cups (1 1/2 pounds fresh) spinach, cooked (steamed or sautéed, liquid removed)

    (***I use frozen chopped spinach)

    32 oz (2 LB) cups whole milk ricotta
    1 egg
    1 tsp fresh ground nutmeg (optional)
    1 1/2 cups coarsely grated mozzarella cheese (extra for top)
    2 cups grated Parmegiano (extra for top)
    6 fresh basil leaves, torn with hands
    Salt and freshly ground black pepper

    Heat the oven to 400 degrees.
    Make a batch of the Sugo al Pomodoro (tomato sauce). Set aside.
    Steam or saute spinach and remove liquid. Cool completely. Cut to create small pieces.
    Mix the ricotta, egg, parmigiano, nutmeg (if using) and basil in a large bowl until combined. Once spinach is cooled, combine with ricotta mixture.
    Bring a large pot of salted water to a boil. (skip steps 5-6 if using no boil noodles)
    Cook the noodles (6 at a time for dried pasta) until they are tender but still underdone (they will finish cooking as the lasagna bakes). Set aside in a bowl of cold water until ready to use. This will prevent pasta from sticking.
    Grease a 9X13 rectangular baking dish with the olive oil, add a large dollop of tomato sauce and spread it around the bottom of the pan. Put a layer of pasta (use 4-5 depending on size) in the dish (you may need to cut any excess to make them fit) top with a layer of tomato sauce, one-third of the spinach and ricotta mixture, and one-third of the grated mozzarella (use your fingers to spread it evenly). Season with salt and pepper if desired.
    Repeat the layers three times. For the top, cover with extra cheese.
    The lasagna may be made ahead to this point, wrapped tightly and refrigerated for up to a day or frozen.
    Bake until the lasagna is bubbling and the cheese is melted and lightly browned on top, about 35 minutes. Remove from the oven and let rest a few minutes before serving, or cool completely, cover well, and refrigerate for up to 3 days, or freeze.

    Notes

    This is a great freezer and make ahead recipe as well. You can freeze the entire pan of pre-baked and assembled lasagna for up to 3 weeks. When ready to use simple bake for an additional 30 min (until the center is fully cooked).

    MONDAY-

    Sheetpan maple meatballs/carrots

    Ingredients

    1 ½ pounds baby carrots
    (***and decent quality frozen meatballs)
    ¼ cup butter
    ⅓ cup maple syrup
    Salt and ground black pepper to taste

    Directions
    Place carrots into a pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes. Drain and transfer carrots to a serving bowl.
    Melt butter in a saucepan over medium-low heat. Stir maple syrup into melted butter and cook until warmed, 1 to 2 minutes. Pour over carrots (***and meatballs)and toss to coat; season with salt and pepper.

    Wednesday- Spanish omelette w/leftover potatoes and leftover rice and beans..
    Plus AdahPotatah supergreens side salad 🥗
    Organic greens, tomato, bellpepper, onion, picked beets, black olives, chickpeas
    -lightly dressed w/olive oil, vinegar, salt, pepper, oregano, and tiny bit sugar

    THURSDAY-🩷 RESTAURANT 💕
    Last night I had deluxe nachos with a a side of chili
    If it's sushi I'll usually have a big bowl of soup and either salmon sushi or eel or maybe one roll
    At the Italian restaurant it's usually a soup of the day and garlic bread at one, but I have to get the spinach lasagna at another because it's so delicious
    At Thai restaurant it's usually massoman curry
    At the American restaurant it's usually a turkey reuben or nachos
    At soul food restaurant I'll have a veggie plate with beans, greens with cornbread, and some sort of casserole
    Once in a while, I'll eat at a different restaurant like Peruvian, Jamaican, Chinese, bbq or seafood, but it's rare.

    Fridays - Shrimp or fish and grits (baked grits with cheese and chili peppers) and a salad.
    Tonight I'm going to make this with meatballs instead of veal
    Veal in Mushroom Cream Sauce (Züricher Chalbs-Gschätzlets)
    Ingredients:

    1 1/2 pounds *veal cutlets, cut into one-inch strips
    3 tbsp flour
    4 tbsp butter
    1 small onion, diced
    1 cup mushrooms, chopped
    Juice of 1/2 lemon
    3/4 cup white wine
    3/4 cup cream
    Parsley, chopped, to garnish, if desired

    * I know that veal can be hard to find in some parts. I’ve read that pork loin works pretty well with this recipe, though I haven’t tried it.
    Directions:

    Season veal with salt and pepper and then toss in the flour. Sauté the veal in the butter until browned, then remove from the pan. (You’ll have to do this in two batches.) Add the onion and sauté until soft, then add the mushrooms and lemon juice. Cover and cook gently for five minutes, then add the wine and deglaze the pan. (Scrape any brown bits that are left on the bottom of the pan with a wooden spoon). Add the veal and allow to reduce well, then stir in the cream before simmering for five minutes. Season to taste with salt and pepper and garnish
    with parsley before serving, if desired.

    Saturday- Classic Country Casseroles

    Since I didn't have shrimp last night, I'm having shrimp and a squash casserole tonight. Maybe turnip greens and cornbread.

    Weaver D’s Squash Casserole

    5 lb. yellow squash

    1 medium onion, diced

    1 stick margarine

    1 teaspoon salt

    1 teaspoon garlic salt

    ½ of a 10.5 oz. can of Campbell’s Condensed Cream of Mushroom Soup

    3 large eggs

    1½ cup sharp cheddar cheese

    1 teaspoon black pepper

    Preparation

    Slice and boil the squash until tender, and then place in a colander to drain.

    Preheat the oven to 350 degrees.

    Saute the diced onion with a stick of margarine. Place drained squash in a bowl. Add margarine, onion, salt, garlic salt, mushroom soup, eggs, cheese, and pepper, and stir all together. Put in a three quart casserole dish.

    Bake at 350 degrees for 1.5 hours. Serves 14 people.

    No restaurant tonight...We're expecting to lose power because of storms so we'll probably try to eat as many turkey and cheese sandwiches,salad, and refrigerated food as possible! We ate up all the eggs this morning and last night.
