making a cheese dip using skim milk?

I usually make a lovely cheese dip for my family using heavy cream. Of course the calories and fat content is rather high for a dieter like myself. Has anyone tried mixing the cheese with skim milk? Does it make for a good tortilla dip or is it too runny and watery?

Searched other recipes and it looks like skim milk can be used for cheese dip. Still unsure if it's actually any good.
My husband is totally against using skim milk. Guess I'll experiment this weekend with a small batch first.

Might want to try greek yogurt and then add a little milk if you need to thin it some0

Thought I'd follow up in case someone does a search later on...
Made the dip with greek yogurt and a little bit of heavy cream and it was pretty good. Not the silkiness of using only heavy cream, but worthwhile for the decrease in fat and calories. Also tried making the dip using skim milk. Yuck! That was a disaster, with it turning out like rubber.0
