Are you using web browser MFP, or the phone/tablet app? If the latter, Android or Apple/iOS?
In web browser MFP, I think you can only delete and replace the meal (log it, edit it your diary, delete from My Meals, re-save the edited meal).
In the phone/tablet app, go to Recipes, Meals and Foods in the More menu, click Meals, click the meal you want to change, click the three dots at top right, click Edit Meal, click the pencil at top right, click the item you want to change, make the change, click the check mark, click Save. (I'm looking at Android when I say this. Apple should be at least similar.)
That's if you want to change the meal forever (for all future uses). If you just want to change it for this one time, log it in your diary, and change the number of servings for the eggs there.

On the web browser version of MFP you can enter negative portions.
Add -1 egg to your meal entry.

If you only had one for one day just change the amount in your daily log. I use the meal option onften, but it is a general list of the "meal" often I need to change an amount or item and I do that on my food log.0
