Spaghetti squash with creamy avocado sauce

Sauce:
1 med ripe avocado, pitted
1/2 lemon, juiced (I recommend using a little bit less than this, when I made it, it was a little too lemon-y)
1-3 garlic cloves (depends on how much you like garlic :wink: )
1/2 tsp kosher salt
1/4 cup basil (optional)
2 tbsp extra virgin olive oil

The sauce is a little thick, so if you want to thin it out a bit add a splash of milk/almond milk.

Microwave spaghetti squash and use a fork to scrape out "noodles". Sautee some zucchini and onions and add with the noodles, then pour the sauce over, and enjoy!
