Peanut Butter Protein Muffins
These are made with no flour, oil or butter, but still have a wonderful muffin consistency! Only 100 cals each with 7g of protein.
Ingredients:
1/2 cup Cottage cheese
1/2 cup Applesauce
1/4 cup Natural peanut butter (can melt in microwave to help blend)
1/2 cup Egg beaters (or fresh egg whites)
1 3/4 cups Old fashioned oats
1/4 cup Protein powder
1/2 cup Baking stevia
1 tsp Baking powder
1/2 tsp Baking soda
1/8 tsp Salt
1/4 cup Low fat milk
Preheat oven to 350 and spray a 12 count muffin tin with Pam (do not use paper muffin liners - they will stick). Mix all ingredients into blender or food processor and blend until smooth. Pour evenly into tin and bake for 20-22 minutes until golden brown on top. Store in fridge. Enjoy!

I just may try these, but with almond milk instead, and using PB2 instead of the peanut butter to cut down on calories = more muffins for eatin'! You could use chocolate PB2 to add a chocolate taste to it.
For those that don't know, PB2 is powdered peanut butter that has had 85% of the fat removed from it. Mix with water to get it back to that creamy state. It's a Godsend for those of us that have had to avoid peanut butter due to its insane calorie value.0 -

Peanut butter has fat needed to keep these muffins moist. PB2 is low in fat, which is why I didn't use it.
You can use any kind of protein powder you want!0 -
You can't just exchange PB2 for peanut butter in baking recipes like that. Stick to the peanut butter. I can't wait to make these!0
