Can’t keep up with our girls! What’s your favorite way to use eggs(can’t get fresher than right from my back yard ;))

    I once mixed scrambled eggs in with plain oatmeal cooked with a little more water and salt and green chile spice.
    I also love putting pesto on scrambled eggs. There's egg cups (when you put scrambled eggs and a meat and veggies and cheese in muffin cups). Or quiches. Frittatas. Omelettes of every kind.

    Custard (including savory custards), meringues (sweet but less calorie dense than most cookies), hollandaise, Scotch eggs, souffle, in salads, egg drop soup . . . .

    Beautiful eggs! I loved keeping chickens when I had a yard suited for it. What a joy they are, and so much more affectionate and intelligent than people who've never raised them realize. Mine used to try to drink out of my coffee cup when I sat on the deck with them, and they would act like they were drinking when I let them have the cup once it was empty. Like kids playing tea party, just adorable.

    Anyway, here's my favorite egg recipe right now:

    Masala Eggs. For about 8 eggs:

    Veggies:

    1 large onion, in 1/2 inch slices
    1/3 tsp salt (add more to taste later)
    1 chili pepper (your fav), small dice
    Green pepper(s) is you'd like, seeds removed, diced
    1 large tomato (or a few small, or some canned etc) chopped
    3 cloves garlic (medium), sliced thinly
    1 tsp cumin
    some garam masala for adding at the end
    1 tsp oil

    Put the onion into the pan without oil, and turn heat to medium high. Add the salt and stir well. Put the lid on and cook a few minutes until onion is sweating and starting to soften. Add oil and peppers, and cook a few minutes, until softening, then add the rest of the ingredients except garam masala. Let cook to how you like veggies to be with eggs. Then cook the eggs.

    Eggs:
    8 eggs, beaten with 1/4 tsp salt to keep moist.
    Heat skillet (I use cast iron typically) and add 1 tsp oil at medium heat.
    With fork ready, pour eggs in and scrap the bottom of the fork tines across bottom, quickly, folding edges towards middle, until eggs are almost set.

    Add 1/2 tsp of garam masala or other favorite seasoning to the top, and fold the eggs gently into cooked vegetables.

    I serve with a gochugang sauce; any sauce you like works, and it's good as is without any sauce.

    Air fryer cheese souffle. I skip the rucola. Remember to remove the basket and put the ramekins on the bottom of the vessel because they rise so much they otherwise touch the heating elements and burn on contact
