Having enough protein through your day is useful for keeping muscle while losing fat, and I suppose eating eggs with bread for breakfast could help with that. But if you're getting enough protein in total, when you eat it doesn't matter super much (unless you're old, say 60+ like me, since us elders metabolize protein less efficiently).
Weight loss is all about calories. Nutrition is for health, energy level, and things like hanging onto muscle so the loss is more fat, less muscle.
Some people would find bread (plus nothing else) for breakfast would find them hungry long before lunch, or might even increase their appetite. If that doesn't happen for you, bread for breakfast is OK, in a context of appropriate calories (for weight loss) and overall good nutrition (for health).
I have no idea what you mean by "fatgrass".1
