Getting started again

Hello,

I am getting started all over again. Starting with breakfast and lunch, trying to eat healthier. I hate salads, so I am trying to find some creative ways to eat healthier. I got 40 pounds to lose and would like to keep it off!

    Weight loss doesn’t have to be “rabbit food”.

    You can sneak healthy and filling vegetables into soups, stews, casseroles. Last time I made lasagna, I shred a bunch of zuchinni and carrots. It “padded” the recipe quite a bit with low cal nutritious ingredients and you couldn’t even taste them in it. Next time I plan to add even more veg.

    (BTW, a great way to lower calories on lasagna is to used ground chicken, mix well with generous Italian spices, let it sit in the fridge a couple of days to absorb the spices and then brown in a dry pan with no oil. It tastes exactly like Italian sausage for half the calories. ). And if you’ve got energy enough to shred your own mozzarella, those full fat mozarella balls or logs taste better and are about 20-30 fewer calories per ounce than the preshredded skim mozarella.

    What about bowls? I’ve had several lately that had lots of lentils, quinoa, rice, hummus, pickled whatever, olives and grilled meats in them. You can get super creative with a bowl, and can reuse the ingredients in wraps, or the next day.

    Think outside your box of “normal”. What do you enjoy eating? How can you tweak it so you can still enjoy it- maybe even more?!

    BTW for breakfasts, I experimented and came up with a devils food protein pancake recipe. Instead of syrup, I whip peanut butter powder with sugar free chocolate syrup and brush it on the pancakes.

    Sometimes I brush them with low cal homemade cream cheese, sprinkle on a little milk chocolate hagel, roll them up, and pretend I’ve got a plate full of Swiss Rolls.

    Thats me, who loves me a sweet breakfast, thinking outside my own box, to see what I can come up with.

    I’m not a unicorn. I just prefer to eat like one. 😛
