Ariel's Salmon Salad

1 can (7 oz) Pink Salmon, drain ... or use fresh cooked
1 T Low Fat Mayo or Miracle Whip
1 T Low Fat Yogurt or Sour Cream
1/4 C finely chopped Celery
1/4 C finely chopped Cucumber
1/8 C finely chopped Onion
1 T Capers or finely chopped Dill
1/8 tsp fresh ground course black Pepper or Red Flakes

4 Red Tip Lettuce or Boston Lettuce leaves

Mix can or leftover crumbled Salmon with dressing. Fold in rest of the ingredients gently. Serve over lettuce leaves or make into rollups. Delicious on Oroweat MultiGrain Thin Bread also with finely sliced Roma tomatoes and Avocado. May also add 1/8 C chopped walnuts or pecans for a little crunch. Enjoy!!!
