I can’t get my head around steps. iPhone Health says I took 15.5k steps today and burned 500cal. The MyFitnessPal app also says I took 15.5k steps but it says I only burned 185cal. Which is right? I’ve connected the 2 apps but the numbers are completely different…

Your iPhone is showing you all the active calories you burned. MFP only shows you those active calories that exceed the activity level you chose on MFP.

does MFP explicitly state anywhere what number of active calories are associated with each fitness level?

Hm, I don't think so, because it possibly varies depending on your BMR (I think it's a multiplication factor). But you can play around with it by changing your activity level setting to see the difference between each activity level. Even sedentary/ not very active will include a certain number of active calories.
For me, the difference between each activity level is 260 calories.
