Parmesan-encrusted tilapia

This is the first time I've posted a recipe, so be gentle! :happy: I personality like my recipes with a limited number of ingredients for simplicity, so absolutely feel free to experiment with your own additions (e.g. lime juice, etc.)

Ingredients:
• 1 lb of tilapia fillets
• 6 eggs (I substitute 3 servings of egg substitute)
• 1 cup (60g) Panko-style bread crumbs (I like Kikkoman)
• 1/4 cup (28g) shredded parmesan cheese (I like Kraft)
• Seasonings to taste (I like McCormick salt-free Citrus Lime and freshly-cracked triplecorn black pepper)

Steps:
• Preheat over to 425F
• Mix all dry ingredients together in a wide, flat bowl
• Scramble eggs in another wide,flat bowl
• Dip each filet in the egg wash (both sides), then into the crumb mixture (both sides), and place on an oiled, foil-covered cooking sheet (I use olive oil cooking spray)
• Cover with foil (I spray it as well) and cook for 25-35 min (flip once midway through)
• You may choose to cook uncovered an additional 5-10 min to add a bit of crust (I do)
