Quinoa Flour

Has anyone used it? How did it work for making crackers, bread, etc.?

I haven't, but I just read up about it and I'm interested. My husband is celiac, and I do a lot of gluten free baking, but hadn't looked into quinoa flour specifically. I'm especially interested in the assertion that as it is high in protein, ir doesn't need the other gums that GF baking often needs for binding.

Apparently for baking you won't need to add other proteins or gums but it does have a stronger flavour than wheat flour:
